Ingredients

  • 1 cup sugar
  • 1 cup strawberry yogurt
  • 1 tsp vanilla flavoring or extract
  • 1 cup (2 big bananas) mashed bananas (the riper the better)
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  • - confectioners' sugar

Directions

1. Line an 8-inch square pan with butter paper and grease with butter and dust with flour.
2. Mix all the wet ingredients with a hand mixer until they are well combined.
3. Sift all the dry ingredients together and add in the wet mixture in batches. Mix well with hand or slow mixer speed after each addition.
4. Pour the batter in the prepared pan and bake at 180C until top springs back when gently pressed and a skewer inserted in the center comes out with moist crumbs attached. It should take from 30 to 35 minutes.
5. Dust with confectioners' sugar before cutting into squares.
6. Enjoy it with milk or cold glass of water!
